Spinach and cheese rigatoni with a sausage and mushroom sauce with three cheeses.
Crazy I know. The cheeses were Jarlsberg, ricotta and for the topping I mixed Asiago with Panko. I did not make homemade rigatoni. That’s crazy talk. It is a work night. I bought it frozen. I cooked one pound of sweet sausage to which I added a can of golden mushroom sauce, petite peas and the cheeses. It is delightfully cool in upstate NY which is why I can get away with having my oven on. Cooking while listening to Gato Barbieri, an experience indeed. Please enjoy my offering.
